Crisp Wings with Freddie Lee's Sauce
Cook the wings until crisp, then add a thin coat of sauce at the end so the glaze sets without softening the skin.

Ingredients
- 2 pounds split chicken wings
- 1 tablespoon neutral oil
- 1 1/2 teaspoons kosher salt
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 3/4 cup Freddie Lee's Mild or Spicy all-purpose gourmet sauce
- 1 teaspoon apple cider vinegar, optional
Method
- Heat the oven to 425°F, or prepare a grill for medium indirect heat.
- Pat the wings very dry. Toss them with oil, salt, smoked paprika, garlic powder, and black pepper.
- Arrange the wings in a single layer on a rack over a sheet pan, or place them on the cooler side of the grill.
- Cook for 35 to 40 minutes, turning once, until browned and crisp.
- Warm the sauce and stir in the apple cider vinegar if you prefer a looser glaze. Toss or brush the wings with a thin, even coat.
- Return the wings to the oven or grill for 5 to 8 minutes, until the glaze is set and the thickest wing reaches 165°F.
- Rest for 5 minutes. Serve with extra sauce for dipping.
