Crisp Wings with Freddie Lee's Sauce

Cook the wings until crisp, then add a thin coat of sauce at the end so the glaze sets without softening the skin.

Ingredients

  • 2 pounds split chicken wings
  • 1 tablespoon neutral oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 3/4 cup Freddie Lee's Mild or Spicy all-purpose gourmet sauce
  • 1 teaspoon apple cider vinegar, optional

Method

  1. Heat the oven to 425°F, or prepare a grill for medium indirect heat.
  2. Pat the wings very dry. Toss them with oil, salt, smoked paprika, garlic powder, and black pepper.
  3. Arrange the wings in a single layer on a rack over a sheet pan, or place them on the cooler side of the grill.
  4. Cook for 35 to 40 minutes, turning once, until browned and crisp.
  5. Warm the sauce and stir in the apple cider vinegar if you prefer a looser glaze. Toss or brush the wings with a thin, even coat.
  6. Return the wings to the oven or grill for 5 to 8 minutes, until the glaze is set and the thickest wing reaches 165°F.
  7. Rest for 5 minutes. Serve with extra sauce for dipping.
