Freddie Lee's Glazed Meatloaf

A spoonful in the loaf seasons every slice, while a generous final coat gives the top a rich, tangy glaze.

Ingredients

  • 2 pounds ground beef, or a beef and turkey blend
  • 1 cup plain breadcrumbs
  • 1/2 cup milk
  • 1 large egg, lightly beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 3/4 cup Freddie Lee's Mild or Spicy all-purpose gourmet sauce, divided

Method

  1. Heat the oven to 350°F. Line a rimmed sheet pan with parchment or foil.
  2. Combine the breadcrumbs and milk in a large bowl. Let stand for 5 minutes.
  3. Add the meat, egg, onion, garlic, salt, pepper, Worcestershire sauce, and 1/4 cup of sauce. Mix gently just until combined.
  4. Shape into a free-form loaf about 9 inches long. Bake for 35 minutes.
  5. Brush the remaining sauce over the top and sides of the loaf.
  6. Bake for 20 to 25 more minutes, until the center reaches 160°F for all-beef meatloaf, or 165°F if using any turkey. Check with a food thermometer; the glaze should be set.
  7. Rest for 10 minutes before slicing. Serve extra sauce at the table if desired.
